The preparation method comprises: adding the selected pork with sodium sulfate, refined salt and white wine for kneading, repeatedly kneading until the ingredients are completely mixed with the meat, and curing for about 20 hours to make the meat bright red; Put lard in a pot and heat it to melt. When the oil temperature reaches 120℃, put the sliced meat in the pot and fry it. When frying the sliced meat, the fire should be low to prevent the sliced meat from frying. After 40-50 minutes, all the water in the meat can be fried and the meat can be taken out of the pot. Boil boiling water in a pot, add aniseed, clove, sugar, pepper noodles, monosodium glutamate and fresh ginger, stir, then add fried meat slices, stir repeatedly for 5-10 minutes, remove and control the water. Dried sauce meat is apricot red in appearance, hung with sugar juice, and sweet and fragrant.
