Flower-blooming leafy fish is a famous dish in Dandong, which is made from grass carp in the upper reaches of Yalu River, supplemented by rape, tomatoes, carrots and other condiments. First, the live grass carp is slaughtered and the meat is made into fish paste, and condiments and auxiliary materials are added. Then the fish paste is made into leaves, which are ripened with oil, and then seasoned with frying, and placed on a plate. Features: the shape is like a leaf, the color is bright, and the taste is tender and delicious. Dandong is rich in fresh water resources, with 23,772 hectares of aquaculture water. In particular, the Yalu River, with a flow of 795 kilometers, is rich in precious wild freshwater fish such as Aohua, Carassius auratus, Makou, Chonglip and catfish. The sea fish is fresh, the river fish is fragrant, and the Yalu River fish is fresh and fragrant. Even the carp grass silver carp in Yalu River tastes far better than the reservoirs and rivers. On the basis of traditional dishes, Jiang Zhenbao, the chef of Anton Pavilion Hotel, adopted the method of combining north and south after years of research and development, and created a new dish with a new taste, "fish with flowers and rich leaves" with freshwater fish from Yalu River, which reflected the new development of catering culture in Dandong.
