Chefs who process and cook puffer fish have to undergo strict training. Wang Changyu told reporters that to ensure the safety of puffer fish, the most important thing is to identify the species of puffer fish and process them in strict accordance with the processing operation specifications. It is understood that the current processing operation specifications and breeding technical specifications of takifugu rubripes in China are all made by Dalian enterprises entrusted by China Fishery Association.
