Quality and technical requirements of milk skin in Zhenglan Banner (Wulimu, Zhenglan Banner) 1. Raw materials require raw milk to be produced within the scope of self-production, in line with relevant national regulations. Production and processing requirements 1. Process flow: raw milk → filtration → heating → boiling → standing → boiling → drying → inspection → packaging → refrigeration. 2. Processing points: (1) Filtration: filter with cleaned and disinfected double-layer gauze or other filters at least once. (2) Heating: put the filtered raw milk in a clean cast iron pan, stainless steel container and other heating appliances, and slowly heat it to 75℃ to 80℃ with slow fire. (3) Boiling: the milk is continuously and evenly turned over, so that a milk foam layer with a thickness of 2cm to 3cm is formed on the milk plane. And (4) standing: keeping the temperature at 75 DEG C to 80 DEG C and standing for 1 hour to 1.5 hours, so that the milk foam slowly fades and a honeycomb milk skin layer is formed. Naturally cooling at room temperature, and standing for 2 hours to 2.5 hours. (5) Boiling: continue to heat to 92℃, add a proper amount of raw milk at room temperature, keep the temperature at 85℃ to 92℃ and stand for 2 hours to 2.5 hours, naturally cool at room temperature and stand for about 2 hours to 2.5 hours. Repeat once or twice in turn. (6) airing: naturally cooling at room temperature of 8℃ to 16℃ for 10 hours, taking the molded milk skin out of the pot, folding in half, shading, ventilating and airing. Quality characteristics 1. Sensory characteristics: the color is milky white or light yellow, with the unique pure cream fragrance of milk skin, fine structure, neat formation and evenly distributed honeycomb dents on the surface. 2. Physical and chemical indexes: moisture (g/100g)≤26.0, fat (g/100g)≥65.0. 3.
