Hot-boiled mutton, also known as "hot pot", is a popular method of eating meat in Inner Mongolia grassland. Because there is no chemical pollution in Inner Mongolia prairie, the water plants are abundant and the temperature difference is large, the sheep meat produced is fresh, tender and tasteless, and it is the first-class raw material for washing pots. Kublai Khan ordered the troops to March and shouted, "mutton", but it was too late to roast mutton. The chef used his quick wits to quickly slice the mutton, put it in a boiling water pot and stir it. When the meat color changed, he fished it in a bowl, sprinkled with salt noodles, chopped green onion and Jiang Mo, and gave it to Kublai Khan to eat. After eating, he won a great victory. When organizing the celebration dinner, Kublai Khan specially ordered the mutton slices he had eaten before the war. For this reason, the chef followed the example of Shangfa, and made it with fermented bean curd, pepper and other seasonings. The soldiers ate it with great praise, and Kublai Khan immediately named it "instant-boiled mutton". From then on, instant-boiled mutton was a palace delicacy, which was spread among the people during Guangxu period of Qing Dynasty. Due to the different regional customs and conditions, the eating methods have their own styles. Inner Mongolia instant-boiled mutton mostly uses the upper brain, outer ridge, hind legs, sheep tail and other parts of the big-tailed sheep, cuts them into moderate slices, and gently rinses them in hot pot boiling water. Then take the prepared sesame sauce, fermented bean curd, leek flower, marinated shrimp oil and other seasoning food. In this way, the meat is fresh and tender, neither fat nor greasy, novel and unique.
