Technical Requirements for the Quality of Guiliuhe Liquor 1. Raw and auxiliary materials 1. Sorghum: The red sorghum produced within the scope of its own production should have a starch content of 60-62% and a tannin content of less than 5%, and the quality conforms to the relevant national regulations. 2. Corn: corn produced within the scope of its own production, the quality of which conforms to the relevant national regulations. 3. Rice, wheat and peas: The quality conforms to the relevant national regulations. 4. Medium-temperature Daqu: The quality conforms to the relevant national regulations. Production requirements 1. Process flow: raw materials → crushing → batching → mixing → retort → distillation → quality wine → graded storage → blending and seasoning → tasting → filling → product. 2. Key production control points: (1) Raw material treatment: corn degerming; Sorghum, rice, wheat and corn are steamed separately. (2) Steaming and impurity removal: the steaming and impurity removal time is 40 minutes. (3) Proportion of raw materials: sorghum, rice, wheat and corn are mixed according to the ratio of 40: 20: 10: 30. (4) fermentation in cellar: raw materials are proportioned, moistened and cooked, and 20% to 25% Daqu powder is added, and double-wheel fermentation is adopted for 140 to 160 days. (5) Pit requirements: The pit built by dry-piling local mineral-rich yellow clay has a pit age of more than 5 years. (6) Storage: Seasoned wine shall be stored in ceramic jars, and aged flavored wine shall be stored for more than 5 years. Third, quality characteristics 1. Sensory characteristics: colorless, clear and transparent, no suspended matter, no precipitation. It has a compound aroma with ethyl caproate as the main body, mellow and harmonious body, refreshing aftertaste and long aftertaste, and has the typical style of this product. The producing areas of Guiliuhe wine are Alide Sumu, Wulan Maodu Sumu, Taohe Sumu, Manchu Township, balague Dai Township, Horqin Town, Russian Town, Julihen Town, Ergetu Town, Chaersen Town, Guiliuhe Town, Dashizhai Town, Debos Town and Suolun Town in Horqin Right Front Banner of Inner Mongolia Autonomous Region, and there are 15 township livestock farms in Lushui. Guiliuhe wine is a geographical indication protection product.
