In 1931, Liu Zihe opened Judecheng, the largest "East Road" (Beijing-Tianjin) restaurant in Baotou. The author found many pages of Judecheng account book during the Japanese and Puppet Period from the papered paper in the old city, which recorded the menus of the Puppet Municipal Office, the mayor, the military department of the group and the "Japanese soldiers" eating in Judecheng many times, among which there was a sea cucumber mat. Even if customers have a light meal, they often have to taste several dishes in the sea cucumber mat, such as stewed sea cucumber and stewed three fresh vegetables. The most distinctive thing is stewed mullet eggs, which are produced in the coastal area of Rizhao, Shandong Province. Huang Yongcheng, a disciple of Zhang Zhongsan, a famous teacher of Ju Decheng, is unique in the making and cooking of mullet eggs, which is soft but not rotten. His teeth and cheeks are fragrant and memorable, and he ranked first in the cooking competition in Inner Mongolia in 1956.
