Youmian is a common kind of pasta in Inner Mongolia. It is made by grinding fried naked oats into flour, then kneading the flour with boiling water, then cutting the mixed flour into noodles and steaming in a pot. When you eat it, you can mix it cold (with roasted eggplant, shredded cucumber and shredded water radish) or heat the topping (mutton with minced meat and mushrooms), which is delicious. The varieties are pushing Wowo (common name "Kao Bang"), rubbing fish, pressing and branding, etc.
