A stiff nose is a moose's nose. Moose, also known as Yida Yi, is the largest deer in the world, known as the "forest giant", mainly distributed in the forests of Daxing 'anling. Moose's nose is very developed and cold-resistant. In winter, it pulls out snow and walks on its nose. The nose skin is the color of sea cucumber, and the cartilage membrane is connected with thin layers of muscles. The meat is tender and crisp, and it is rich in bone acid, protein, fat and inorganic salts. As one of the most famous delicacies in Daxing 'anling, Yi Nose, together with Bear's paw and Feilong, can be made into "Braised Yi Nose", "Burning Qi Noodles" and "Burning Yi Nose and Curling Wind", all of which are famous dishes at home and abroad.
