Shenchi is a traditional farming-pastoral ecotone with unique natural conditions for developing lamb industry. In recent years, based on reality, we have vigorously implemented the strategic adjustment of the agricultural structure of "returning farmland to grass and increasing income in captivity". Adopt "5+3" and "6+1" moderate breeding mode of family farming and intensive breeding mode of standardized breeding plot to make lamb industry develop rapidly. The quality of Shenchi mutton is good, and its appearance is mainly manifested in the large proportion of hind leg meat and shoulder meat, delicate and tender muscles, compact and beautiful meat pieces, high protein content and low fat content, but the intramuscular fat content in the meat is high, and subcutaneous fat is evenly distributed on the whole surface of the body. Lamb meat has the characteristics of light smell, delicious taste, fine fiber, few tendons in the meat, tender and juicy, easy to digest and absorb, and easy to rinse, stir-fry, stew and roast. The carcass is upside down, with a "U" shape between the two hind legs. The muscles are plump and developed, the eye muscles are large, and the fat coverage on the body surface is not thick but uniform. The cross section of the sixth rib of the carcass is O-shaped. Shenchi mutton has the characteristics of rich flavor, its meat is fresh and tender, fat and thin, fat but not greasy, and refreshing. After boiling, the broth is transparent and clear, and the fat has a fragrant taste, but it is not greasy. The protection scope of geographical indication products of Shenchi mutton covers 250 administrative villages in Longquan Town, Yijing Town, Bajiao Town, Changfan Township, Liebao Township, Dayanbei Township, Donghu Township, Hezhi Township, Hubei Township and Taipingzhuang Township in Shenchi County, Xinzhou City, Shanxi Province. The geographical coordinates are 111 42' to 112 18' east longitude, 38 56' to 39 24' north latitude, and the altitude is between 1320 and 1680 meters. The county covers an area of 1457 square kilometers. There are 300,000 sheep in stock, 250,000 sheep in slaughter and an annual output of 4,000 tons. Shenchi mutton is a geographical indication product of agricultural products.
