Millet oil cake

A traditional local flavor snack in Yuncheng, Shanxi Province, the millet (pronounced fu in dialect) noodle oil cake (also known locally as millet noodle oil tea cake dialect fu mian you ca gao) is made of superior millet (sh ʰ zi) noodles, wrapped with jujube, fried in an oil pan, yellow, fragrant and crisp, covered with white sugar, sweet and delicious, with a long aftertaste. The practice of millet flour oil cake is extremely particular, and most of them belong to the secret recipe.
