Yushe Ejiao

Yushe Ejiao is a specialty of Yushe County, Jinzhong City, Shanxi Province. The finished product of Yushe Ejiao is rectangular or square, with dark brown shiny surface, hard and brittle, and bright section. After being smashed into pieces, it is brown and transparent to the light, and has the characteristics of easy storage and no deterioration. Yushe Ejiao Factory was established and put into operation in 1955, and Zijinshan Quanpai Ejiao has been produced since 1966. It is a famous brand product and trademark in Shanxi Province. The cooking skill of Yushe Ejiao is the intangible cultural heritage of Shanxi Province. Ejiao, or donkey hide glue, is called "the product of flesh and blood" in traditional Chinese medicine because it is made from animal skins. It has been made and eaten for more than 2,000 years, and it has been listed as the top grade in Shennong Herbal Classic, the earliest existing medical classic. Because of its magical effects in eating and medicine, Ejiao has been favored by emperors in past dynasties, and it has been listed as one of the tributes, known as "tribute Ejiao". Colla Corii Asini is composed of collagen and its partial hydrolysate, containing 16.43% ammonia, which is basically protein. After hydrolysis, various amino acids are produced, including 10% lysine, 7% arginine and 2% histidine. Ejiao, with its flat nature and sweet taste, has the effects of nourishing yin, moistening dryness, nourishing blood and stopping bleeding, and is exported to all parts of the country.
