Changzhi Mutton Huimian Noodles

"Mutton Huimian Noodles" is an ancient noodle among Hui people in Changzhi area, which was famous in Sanjin as early as the late Ming and early Qing dynasties. After the reform and opening-up, traditional food has been reborn, and "mutton Huimian Noodles" sold by large and small Muslim restaurants and vendors can be seen everywhere in Changzhi city. In May 1994, Cheng Jianyong of Yixiangzhai Hotel in Changzhi participated in the first national Muslim cooking technology competition, and his "Mutton Huimian Noodles" was awarded as "National Muslim Flavor Brand Product". In 2001, in the first Noodle Festival Competition held in Shanxi Province, the "Mutton Huimian Noodles" of Yihe Xuan Hotel in Changzhi City won the gold medal.
