Wuxiang fried finger is a specialty of Wuxiang County, Changzhi City, Shanxi Province. After mixing the noodles, roll them into thick cakes, cut them into finger-sized noodle pieces, then grind them into powder with dry soil, boil them in an iron pan, and then fry the noodles. It tastes crispy and delicious. "fried finger" is a kind of pasta product, named after its appearance like a human finger. Speculation refers to the specialty of Changzhi area, which is found in xiang yuan and Pingshun, and the most famous is Wuxiang. Generally, white flour is the main ingredient, and millet flour, yellow wheat, eggs and sugar are added.
