Zhangzi fried cake

The "eldest son fried cake" in Changzhi, Shanxi Province has a long history, which spread to Shanxi, Hebei, Shandong and Henan as early as the Guangxu period of the Qing Dynasty. Its characteristics are soft and delicious, and its fragrance is not greasy. It is not only a favorite food for Shangdang people, but also a pleasure for foreigners to taste its flavor when they come to work for their eldest son. In 1974, the Catering Service Department of the Commercial Bureau of Southeast Shanxi Province included "eldest son fried cakes" in Basic Knowledge of Cooking Technology, and Changzhi Daily, Taihang Daily, Shanxi Daily, China Food News and Cooking Knowledge successively published its making methods and flavor characteristics. In 1984, he won the first prize in the famous products and famous food fair in southeastern Shanxi. In April 1987, it was included in the book "Highlights of China Scenery Dishes" by Shanghai Jinjiang (Group) Joint Venture and Service Food Technology Research Center.
