Shangdang's "meat noodles" and Southeast Shanxi's "noodles with minced meat" are folk dishes for weddings, funerals, birthdays and New Year's greetings, which have long been well-known in urban and rural areas of Shanxi, Hebei, Shandong and Henan. Whether it is machine-made noodles or hand-made noodles, the marinade must be fried meat slices, hence the name "poured meat noodles". When making marinades with meat noodles, put lard in a wok on a strong fire to heat it, put pepper in a wok, then take it out and stir-fry it with sliced meat and aniseed. When the oil is about to come out when the water content of the sliced meat is exhausted, cook vinegar, stir-fry onion, ginger, garlic and flour paste, then add soy sauce, refined salt and clear water, and simmer for about half an hour with low fire. When the sliced meat is soft and rotten, skim off the oil slick, and the fried sliced meat is marinated.
