Lingqiu smoked chicken Lingqiu smoked chicken is very famous. It is called one of the "four famous smoked chickens" (smoked chicken, bacon, smoked vinegar and smoked pigeon) in Shanxi. According to books such as "Stories of Famous Foods" and "Special Cuisine", during the Yongzheng period of the Qing Dynasty, brothers Li Jincai and Li Youcai, the official chefs of Lingqiu County, researched and produced smoked chicken. Later, they opened a restaurant in the city-smoked chicken for sale. The son inherited his father's business and passed it down from generation to generation. At the end of the Qing Dynasty, Li Yun inherited this traditional skill and explored a unique production method, which reached the level of purity. Li Yun (1900-1980) was a native of Lingqiu. When he was young, he worked with his father (Li Yucheng) and later became a famous chef in Lingqiu. In the long-term production practice, he inherited his father's traditional seasoning formula, but constantly improved it, making smoked chicken better and better. His summary is: "If you want to smoke chicken, add soup stock to the seasoning." In the production process of smoked chicken, first of all, try to choose fat and strong live chickens, and after slaughter, scald the chickens with hot water to clean their hair. The second step is to cook the chicken. Before cooking, the chicken should be washed with water for three or four times, and then put into the old soup to cook. The third step is to cook it and then soak it in hot soup with good ingredients for more than ten hours. Its ingredients are thirteen kinds of cardamom, cypress, Amomum villosum and dried tangerine peel. The fourth step is smoking, in which cooked chickens are smoked and roasted with fireworks burning with chaff and cypress. Li Yun once opened a personal smoked chicken shop in the city, Kuijian and Shahecao, which is very famous. Now the heirs of Lingqiu smoked chicken are Li Yun's son, Li Ruyun and his wife, Wang Guiye, who are unique in Lingqiu. The smoked chicken made by his family has four characteristics: "fragrance, rotten, color and taste". The chicken smoked by his family has the effects of invigorating spleen and stomach, tonifying deficiency and regulating qi, nourishing essence and calming the nerves by adding a variety of traditional Chinese medicines during cooking and processing. The traditional smoked chicken in Lingqiu is very popular with the local people, and it is well-known in northern Shanxi.
