Yungang beer

Yungang beer is a famous local product in Datong city, which is produced in Datong winery. In 1987, Yungang beer and special Yungang beer were both rated as high-quality products in Shanxi Province, and sold well in Beijing, Hebei, Shaanxi, Inner Mongolia and other provinces, cities and autonomous regions. Datong is a famous historical city. In the Qin dynasty, it was one of the 36 counties in China, "Yunzhong County", where the Northern Wei Dynasty once established its capital, and later renamed Datong Prefecture. Shanxi Tongzhi contains "the custom of Datong Prefecture is beginning to make wine", and the poems of Ming and Qing literati include "Liu Anqing covers up the sale of wine", "The famous blue wine is full of ou" and "A cup of wine dripping with ancient and modern words". According to the textual research of Shanxi Light Industry, in 1926, industrial and commercial capitalists founded Datong Xingnong Chemical Industry Co., Ltd., which also engaged in alcohol and flour. In 1935, it was taken over by Northwest Industrial Company and renamed Datong Xingnong Alcohol Factory, with an annual output of 2.23 million kilograms. In 1938, it was changed to liquor and whisky, and in 1946, the factory was destroyed in the war. In 1952, Datong Distillery was built on the former site of Datong Xingnong Alcohol Factory, and liquor production was resumed. In 1973, beer products were developed and named Yungang Beer with Yungang Grottoes as the background. After several expansions, the current annual output has reached 15,000 tons. Yungang beer is a light and refreshing beer, which is brewed by using high-quality malt and rice as raw materials through gelatinization, saccharification, filtration, yeast fermentation, filtration, bottling and sterilization. Its original malt concentration is 12 degrees. The wine is light yellow, clear and transparent, with white and delicate foam, lasting cup hanging, obvious malt aroma, fresh bouquet, mellow and refreshing, and obvious carbon dioxide stimulation.
