Hemp leaf with big head is a traditional snack of Datong people, which has distinct local characteristics. There are many noodle shops and restaurants in Datong that make big-headed hemp leaves and sell them in the streets. Big-headed hemp leaves, fried with cooked food in Gulou, are the most popular among the masses. The preparation method comprises the following raw materials: 5g of flour, 2kg of syrup, 50g of salt, 250g of yeast, 2.5kg of cooking oil and a proper amount of alkali. Technology: Fermented flour (250g), sugar syrup (1.9kg), alkaline flour and salt are mixed into paste with warm water, poured into 3750g flour, and added with appropriate amount of water to form dough. Mix the remaining flour and syrup into a piece of dough (if it is hard, you can add a proper amount of warm water), and roll it into a long square with a thickness of 3 cm on the dough table, which is called a prodigal son. Roll the dough into a rectangular shape with the prodigal son, put the prodigal son on it, spread it evenly and tightly, brush the oil on it, then wake up for about 20 minutes, pour the oil into the pot and heat it, cut the awakened noodles into pieces with a length of 10 cm and a width of 7 cm, and the two pieces overlap. Dig a small hole in the middle with your fingers, turn one end over from Confucius, put it in an oil pan, and let the four heads rise. When cooked, take it out and eat it.
