Taiyuan dried bean curd is the product of Taiyuan Bean Products Factory No.2, which is famous for its long history in Sanjin. Taiyuan rotten dry, also known as famous rotten dry. As early as the Song Dynasty, it was famous in Sanjin, and it has a production history of more than 800 years. According to legend, during the Ming Dynasty, a corrupt official named Zhang Yinghu was praised by Jin Wangfu, who was once very popular and had many admirers. Because of the fine selection of materials, fine workmanship and good quality, people collectively refer to the dried bean curd produced by the firm as "No.1 dried bean curd". The No.2 Bean Products Factory in Taiyuan used two high-quality varieties, Longan and Swan Egg, which were planted in Huyan, a suburb of Taiyuan. The factory strictly implements the rules of "one fine, two hot, three uniform and four reflective" in technology, and is equipped with more than ten kinds of condiments such as aniseed, pepper, cinnamon, cardamom, Amomum villosum, galangal, clove, dried tangerine peel, costustoot, anise, seedlings and kaempferia kaempferia. The pressed dried tofu is cooked first and then stewed, boiled three times and dried three times (every 24 hours) The flavor of food is rich and the aftertaste is long.
