There are many ways to eat buckwheat in Chengde, Hebei Province, and the most prestigious one is the noodles in Zhangsanying Town, Longhua County, Hebei Province. Zhang Sanying's original name was "one hundred sons". According to the Records of Chengde Prefecture and Longhua County, in the twenty-seventh year of Qianlong (AD 1762), Emperor Qianlong led hundreds of officials from the civil and military forces to go hunting in Mulan paddock, passing through one hundred sons, and lived in the palace at the foot of Longtan Mountain in the east of Yixun River (built in the forty-second year of Kangxi). On the afternoon of the same day, Zhou Tong, the head of the palace, reported the royal meal arrangement to the eunuchs accompanying him, and specially ordered the local noodle maker, Jiang Jia brothers, to make buckwheat noodles for Ganlong, and took good Longquan water and noodles from Longquan ditch in Xishan Mountain, and made brine with old chicken soup, shredded pork, diced hazelnuts and pure fungus. After the food was served, the eunuch took off the silver cover of the rice plate. When Qianlong saw that the dial in front of him was white and flawless, thin as silk, and fragrant, he had an appetite. He even ate two bowls and repeatedly praised the noodles as "white as jade, and snow deceives frost". He also immediately recited a poem: "Let's go around and feast according to the example, and give benefits and answer the Chinese New Year's Day. It is resistant to going to the palace for nine days and elegant." He also ordered the eunuch to give twenty taels of silver to the Jiang brothers. From then on, the name of the noodle was changed to "dial royal noodles", and the reputation of a hundred white buckwheat noodles was greatly shocked, and the business of the Jiang brothers was also more prosperous. In the more than 170 years since then, the recipe of emperors and empresses has added a "dial royal noodles". After liberation, Zhang Sanying's "Hejia Noodle Shop" was once famous. Unfortunately, during the ten years of turmoil, the shop closed down and the craft was lost. In the late 1970s, young chef Xin Zhanwu re-studied and restored this traditional skill. In 1981, Xin Zhanwu was invited to the Diaoyutai State Guesthouse in Beijing for two months and taught four apprentices. All domestic and foreign guests who have eaten noodles are full of praise. The raw materials for making royal noodles are 100 pieces of white buckwheat noodles, old chicken soup, shredded pork, diced hazelnuts, fungus, salt and so on. Put the cooked noodles in a bowl and pour the marinade made of old chicken soup, shredded pork, diced hazelnuts, fungus and salt. The noodles are as white as snow, with unique flavor, and have the functions of stimulating appetite, strengthening spleen and lowering blood pressure.
