Huai 'an potato is a specialty of Huai 'an County, Zhangjiakou City, Hebei Province. Huai 'an potato is yellow in flesh, shallow in bud, high in starch content and good in palatability. It is deeply loved by consumers and enjoys a good reputation in Zhangjiakou area. Potato is the second dominant crop in Huai 'an County, with a perennial area of about 120,000 mu. It is mainly distributed in the five towns of Sanbao, Wang Hu Tun, Huai 'an City, Toubaihu and Taipingzhuang in Qianchuan County, where the climate is relatively cool. There are mainly varieties such as Jizhangshu No.8, Atlantic, Yidunqing, Feiwuruite and Wuchuanbai. Among them, Yidunqing is a characteristic variety cultivated by Huai 'an County. Because of its high starch content and storability, it is liked by locals and is a characteristic variety of Huai 'an County. "Yidunqing" is named after its long growth period and late seedling return, which makes it a local autumn green. A mound of green potato originated in the southern hilly area of Huai 'an County, Hebei Province, and its potato shape is oval and flat, with good shape. The bud eye is shallow and easy to clean; The sweet potato meat is yellow, with high starch content (up to 20%) and good taste when cooked. It belongs to starch potato. Yidun green potato is deeply loved by people in Baxia area of Zhangjiakou because of its strong stress resistance and excellent palatability. Because of its low yield per unit area, large number of individuals, not wide planting range and slow seed degradation (at least five generations can be planted), the detoxification work has not been paid attention to and replaced by other commercially operated varieties. Local farmers often say, "let's have a good medicine!" It helped us through a lot of famines "and a mound of green potatoes is still planted in a large area in Huai 'an. The planting areas are concentrated in Sanbao Township, Taipingzhuang Township, Huai 'an Town and Tun Township in Wang Hu, with an area of 80,000 mu and an annual output of 120,000 tons.
