Quzhou mixed noodles are a specialty of Quzhou County, Handan City, Hebei Province. People in Quzhou County use wheat flour, mung bean flour and yellow bean as ingredients in proportion, and use egg juice to make noodles. The mixed noodles are uniform in thickness, bright in color, and well-known throughout the province. People in Quzhou County have always given priority to pasta, especially noodles. However, in the Ming and Qing Dynasties, wheat production was low, and bean crops were planted more, so people mixed wheat flour with bean flour to make noodles, commonly known as Quzhou miscellaneous noodles. Because it is produced in Quzhou, it is called curved surface for short. Curved surfaces have a history of more than 300 years. According to historical records, during the Qianlong period, eunuchs were sent to the miscellaneous noodle shop in Quzhou to buy curved surfaces. It can be seen that curved surface has become one of the commonly used imperial dishes. Curved surface is a traditional folk food in Quzhou. Three main ingredients, mung bean, soybean and winter wheat, are ground into fine powder according to a certain proportion, put in a basin, and mixed with egg white and sesame oil. Blending into dough blocks; Knead for more than half an hour to make it a soft, soft and tough cooked noodle, then use pure mung bean powder as the pavement, roll it into thin slices with a flour pin, cut it into thin strips with the same thickness with a quick knife, and finally cut it into pieces according to the specifications to become the finished product.
