Luhua chicken is a traditional famous dish in Tangshan. It uses hen's chicken legs that have just been fattened in the late autumn and early winter when the reed flowers are flying, and washes them to remove hair. They are marinated with cooking wine, monosodium glutamate and shredded onion and ginger, then fried until they are purplish red, removed and put on a plate. This dish is bright in color, elegant in appearance, crisp and tender in meat, delicious and mellow, and unique in flavor. Although luhua chicken is delicious, its origin is accompanied by astringent bitterness. According to legend, during the Spring and Autumn Period and the Warring States Period, a rich man named Member Min gave birth to a son named Zi Qian. Zi Qian's mother died soon, and Member Min continued to marry Yan, and gave birth to a son named Zi Wan. Yan loved his own son and abused him in every way. All the aunts and servants in the family knew that Zi Qian was pitiful, but only Mr. Min was kept in the dark. A few years have passed, and Zi Qian and Zi Wan have grown up. On this day, Mr. Min gave a banquet to the guests, who all warmed their clothes and gowns and came in the cold. After the family rushed, the banquet was very rich, and Mr. Min also ordered his two sons to dress up and receive the guests together. When a plate of fried chicken legs was served, all the guests praised it. Mr. Min was very happy and kept persuading him to drink. Zi Wan was also natural and graceful, and his ruddy face was full of joy. Only Zi Qian was embarrassed, his hands clasped his shoulders, shaking and losing face. Member Min was very annoyed. After the guests excused themselves, an evil spirit broke out in Mr. Min's heart. He called Zi Qian to the front and cursed Zi Qian for being a worthless key. Zi Qian was so scared that he was passive and did not dare to speak. Seeing his son's cowardice, Mr. Min's anger in his heart was even worse. He picked up a whip and aimed it at Zi Qian. Whips were everywhere, and I saw reeds flying around. Mr. W was taken aback. When he walked over, it turned out that Zi Qian's cotton coat was not filled with soft and warm cotton, but with reeds that were difficult to keep out the cold. Mr. Min realized that there was a reason for his son's trembling in the banquet. Member Min was angry and wanted to divorce Yan, but Zi Qian was a filial child. Unable to bear his father's old age and no companion, he knelt on the ground and begged him not to divorce his wife, and the father and son cried. The family cleaned up the leftovers and found that the delicious chicken leg was covered with reeds. Although Luhua is inedible and represents a bitter story, it makes the dish more beautiful, so it was named Luhua Chicken, which has been passed down from generation to generation.
