Korean whitebait, also known as fried whitebait, is a traditional dish in Tianjin. Tianjin whitebait is one of the specialties of Bohai Sea. Its volume is larger than Taihu whitebait, its color is white as jade, its meat is tender and delicious, and it lasts all the year round. There was a praise for it in "Jinmen Zhuzhi Ci": "The whitebait wine is tasted like cucumber soup, and the jade eye is as expensive as the golden eye, and the Haihe River is not as good as Wei Haiqiang." The court of the Ming Dynasty once set up the most famous "Korean whitebait" in Tianjin. The fried whitebait is fragrant and delicious, which is better than the soup.
